I won't lie to you, I'm not much of a cook. I go through phases of trying new recipes, which I've been doing a lot since I became vegan a couple of months ago, but after making and ruining a recipe once or twice I go back to cooking nuggets and oven chips for a quick meal. I like things that are quick and easy to make, that don't require you to be Gordon Ramsey, and ideally involve as little clean up as possible.

I can't remember how I found this recipe, but I'm so glad I did, because it's become a go-to. I don't really follow the recipe any more, and I never really measure anything when cooking (which is why I'm awful at baking) but this dhal is completely idiot proof, and even when you get it slightly wrong it's still good. I like to make it in giant batches, even though a little of this goes a long way and is super filling, so I can have some ready for dinner to take to work if I don't have much time to make something before I leave.

A list of ingredients and exact measurements can be found in the like above to the original recipe, but like I said, I don't play by the book, so this is just how I throw everything together.


I start by chopping up a large white onion. The recipe says to dice it, but I find that once it's all done the flavour kind of gets lost, and I quite like the sweet onion in it, so I roughly slice it up. I then pop it in a large preheated saucepan on the lowest heat with a glug of sesame oil, put the lid over it, and set the timer for 10 minutes.

While the onion is softening, I prep the sweet potato by peeling a couple of big ones and chopping them into fairly even chunks. I find that if you halve them a few times they're the right size and don't end up too mushy when cooked. I also use this time to chop up a clove of garlic (although garlic powder works just as well) and put some water in the kettle to boil for vegetable stock.

Once the onions are done I season them with the garlic, and turmeric and cumin. I don't add salt in at this point because it can get a bit much with the vegetable stock in. I don't go by measurements, so I'd say I use roughly a tablespoon of each spice. The first time I made this I used a teaspoon and a quarter but I found it didn't have as much flavour as I'd like it to. Once the onions are coated I then add the sweet potato chunks and mix everything around until covered in seasoning.

The next step is to pour in the lentils, and then NOT MIX IT. This will bring all the potato to the top of the pan which then means it won't cook properly and you'll have a  big old mess of lentils when you have to cook everything for longer to soften them up. Over the lentils goes the vegetable stock, until everything is covered. Bring the liquid up to boil, then reduce the heat, cover and cook for 20 minutes.

Once done, you can taste the seasoning and add whatever you feel is lacking, before stirring in some spinach. I'm not necessarily a spinach fan, but 80g really doesn't seem like much to me once it's wilted down and stirred in. 250g (approx half of the big bag I usually get) does just fine for me, but it depends on your taste and how much you like the green stuff. Depending on if I have any floating around in the fridge leftover, I sometimes add cauliflower 5 minutes after I've put the lentils in, just to add some extra health.

Following up from my first post being a little introduction to my blog, I figured I'd use this post to let you know a bit more about me, and what better way to do that than through music? I like to think I have quite a varied taste in genres, but in reality I listen to a lot of the same kind of thing, and I'm currently working on finding new artists. Spotify has been a really good source for me, I constantly refer back to the daily playlists it creates for me, as they always contain some firm favourites of mine along with similar new artists to add to my music collection. 

I'm currently working on keeping an up to date playlist of songs from bands I find, but here's a non-definitive list of artists I haven't been able to get out of my ears recently, some of which I would call my favourite bands, some I'm just venturing into.

Frank Carter & The Rattlesnakes


I first heard of Frank Carter when he was mistakenly called Frank Turner (one of my favourite musicians) on BBC radio, but never really paid much attention to him. After listening to their sophomore album Modern Ruin, I've realised that their music isn't as "heavy" as I'd originally thought, and that I shouldn't have wasted time not listening to this. I particularly like the tracks Snake Eyes and Wild Flowers.

High Tyde


A Spotify find I'm particularly happy with, the track Speak first appeared on an indie daily mix and I spent the rest of my ride into work listening to the Real EP. It's super upbeat and just what I need to liven me up when I'm super tired on the train but gotta be somewhere bright eyed and bushy tailed. Glow is probably my favourite song from them, although not on the EP it's worth a listen, or 20 if you're me and dancing around getting ready for a night out.

Jaws


Jaws were a band recommended to me a friend several years ago, who I listened to religiously for weeks and then just kind of forgot about. I really enjoyed their first album, Be Slowly, there was a lot of simplicity in the lyrics and melodies that made it really easy to listen to and that gave the record a dreamy quality, which I'm very much a fan of in music. Last year they released Simplicity, which showcases a lot of natural progression in their style, making it a more grown version of Be Slowly. I really love the chorus of What We Haven't Got Yet, and how it contrasts with tracks like 17.

Paramore


I feel I need to give a some special mentions to Hard Times, it's super sunny and reminds me a lot of Fickle Friends, who I'm super into right now. It's been so long now since Paramore released something new that I kind of forgot the existed for a couple of years if I'm honest, and then all of a sudden this track appeared on my timeline to bless my gloomy day. I'm really into this track and I hope that the band's new album continues off in this direction into jammy pop tunes.


Frank Turner


I don't think I can do any kind of writing about music about this guy, and I'm sorry, but he still remains one of my favourite songwriters, and I'll stop writing about him when he stops releasing relevant tunes and speaking to my soul. The Sand In The Gears was written on a North American tour just after Trump's inauguration, and then played on some of those shows. The day after the Womens' marches all over the world Frank released a live recording of this song. It speaks of using music and and concerts as safe spaces from hatred, and about not giving up the protesting just because Trump is in to stay, but being "the sand in the gears for the next few years", making life difficult for him and those his warped ideas seem to encourage.

Welcome to my little corner of the vast internet. At times it may seem incoherent and disorganised, with no real rhyme or reason to the posts, but I hope that what spews out of my brain and onto the screen will be at least mildly entertaining and maybe even useful. 

For a short while I wrote for a small music blog, Clipped Wings, but shortly after realised that I didn't just want to write album and live reviews. For a couple of years I've been keen on makeup, and find now that a lot of my friends will come to me for tips or new products to try, which I am more than happy to help them with. I've also been vegetarian for most of my life, and have recently gone vegan (after debating the decision to fully cut animal products from my diet for years). These, on top of general life and style, have all been things I've been interested in and wanted to share my experience of, so I guess now is as good a time as any to start.

For the moment I plan on posting at least once a week for the time being, and I'll be experimenting a lot with my writing and general blogging style, so please be patient with me as I figure this all out! Posts may range from short product reviews to ramblings about life, quick recipe ideas to longer music recommendations, you may find something of interest here somewhere, you may not.
